| Among Thais, the Northeast, I-San in Thai, is famed
for its delightful spicy food. Making it even more spicy and appetizing is the liberal use
of fiery little green and red chilies. The meal begins when diners sit around a circular
table arranged with a variety of dishes. In front of each diner is a woven bamboo basket
containing sticky rice (khao nieow). The diners make tiny balls out of the rice, using it
to mix and dip food. No utensils are used. Eating in this manner is a significant part of
the I-San people's lives. |

| A typical I-San meal includes "som tum," shredded
green papaya salad; "kai yang," barbecued chicken; roast beef, pork, liver;
deep-fried dried beef; "larb," minced pork, beef, chicken, or duck cooked in
I-San style; and "soup nor-mai," boiled bamboo shoot soup. All dishes are eaten
with fresh vegetables. Deep fried beef or crispy chicken skin are eaten as
"bites" between courses with a few sips of beer. I-San
